I just saw your comme...+JMJ+<br /><br />Hi, again, Belinda! <br /><br />I just saw your comment on Shredded Cheddar but didn't have your e-mail address, so I hope you don't mind if I share my recipe here:<br /><br />2 cups sugar<br />1 cup oil<br />2 eggs<br />2 cups cake flour<br />2 Tbsp baking cocoa<br />1 tsp salt<br />1 tsp vanilla<br />1 cup buttermilk<br />2 tsp baking soda<br />1 Tbsp vinegar<br /><br /><i>(You could use butter instead of oil, but the oil makes it more moist.)</i><br /><br />Preheat the oven to 150 degrees Celsius.<br /><br />In one mixing bowl, cream the sugar and oil. Beat in the eggs (one at a time) and the vanilla.<br /><br />In another bowl, sift together the flour and salt.<br /><br />Add the flour mixture to the creamed mixture a little at a time, alternating with the buttermilk.<br /><br />In a small bowl, mix the baking soda and vinegar. Add the ensuing chemical reaction to the batter.<br /><br />Mix the red food colouring with the cocoa and then add it to the batter as well.<br /><br />Pour the batter into greased and floured cake tins . . . or a non-stick cake pan . . . or cupcake cups.<br /><br />Bake for 18 to 20 minutes if you're making a cake or 15 minutes if you're making cupcakes.<br /><br /><i>(I know that it has a lot of steps and uses a lot of bowls, but when I tried a quicker way, combining all the dry ingredients in one bowl and all the wet ingredients in another, before mixing them together, the cake didn't taste as good!
