I made chicken salad sandwiches for lunch with fresh greenbeans and grapes on the side. Then a piece of chocolate cake from scratch with buttercream frosting for my sons birthday. Monday is diet day. :(

Dont even go there, I'm on a diet. :( I'm trying not to die fat someday. How will I explain away my gluttony? Besides I hate the gym but I do come away with some amusing material for my blog. hahaha
BTW. I always put up the art work people make for me. That's what moms do and I'm an arrrrtist too. hahahaha Or maybe just a wannabe.
You CAN make them more waistline friendly by using a low-cal mayo or miracle whip type dressing, and even cutting that back and adding more dijon/spicy type mustard. I have discovered that blasamic vinegar puts a bit of a twang in recipes without overkill. I like more of a bite rather than a sweet..
And cook the chicken by grilling or baking....most of the fat runs out of it then.
I allow myself one dessert a week...we're not in Purgatory (yet;)
I had waffles this morning..I make up a big batch from scratch then put in freezer, two per bag.
Gotta think about dinner tonight..it is storming big time outside so no grill..I may use up some lasagne portions I have in the freezer. Nice thing about toaster oven is that it doesn't heat up my kitchen.
I'm not a real big carb watcher...except for "white carbs"--white bread, white rice, potatoes---I found I was really sluggish in the am when I ate alot of "white carbs...since I got rid of most of them out of my diet I am much better inthe am and not needing 4 cups of coffee just to be functional.
Yeah the low-fat mayo isn't the tastiest--that is why I zing it up with either balsamic vinegar or spicy mustard..I'm not a big mayo fan anyway, and when I do it's usally mixed in with something else.
