I just saw your comment on Shredded Cheddar but didn't have your e-mail address, so I hope you don't mind if I share my recipe here:
2 cups sugar
1 cup oil
2 eggs
2 cups cake flour
2 Tbsp baking cocoa
1 tsp salt
1 tsp vanilla
1 cup buttermilk
2 tsp baking soda
1 Tbsp vinegar
(You could use butter instead of oil, but the oil makes it more moist.)
Preheat the oven to 150 degrees Celsius.
In one mixing bowl, cream the sugar and oil. Beat in the eggs (one at a time) and the vanilla.
In another bowl, sift together the flour and salt.
Add the flour mixture to the creamed mixture a little at a time, alternating with the buttermilk.
In a small bowl, mix the baking soda and vinegar. Add the ensuing chemical reaction to the batter.
Mix the red food colouring with the cocoa and then add it to the batter as well.
Pour the batter into greased and floured cake tins . . . or a non-stick cake pan . . . or cupcake cups.
Bake for 18 to 20 minutes if you're making a cake or 15 minutes if you're making cupcakes.
(I know that it has a lot of steps and uses a lot of bowls, but when I tried a quicker way, combining all the dry ingredients in one bowl and all the wet ingredients in another, before mixing them together, the cake didn't taste as good! Funny, that . . .)

Thank you so much for sharing. I have wanted to make one of those cakes for a while now but I never have.( a coca cola cake too) I wonder what the vinegar does for the red velvet cake, if its for flavor or chemistry - you know for leavening the cake.
I'll use the same frosting that I use for my carrot cakes. I will try the red velvet cake for Easter and I hope to post a recipe for my husbands favorite chocolate cake after Easter too.
I noticed the same thing that you did- when I used real butter the cake was dryer than when I had used the oil but I thought the oil would make the cake less healthy than butter-- hahahaha a healthy cake! ROFL

I think it's for the chemistry, because baking soda needs something acidic--and I guess the buttermilk isn't enough!
